Veggy Malta checks out: Bjorg Organic Muesli Cereal (no-bake recipe included!)

The main ingredient in Bjorg’s muesli cereal range is the wholegrain. Wholegrain cereals are a rich source of many essential vitamins, minerals and a good source of antioxidants and phytochemicals (compounds found in plants) that can help lower blood cholesterol levels. In fact, one would notice a lot of oat flakes in Bjorg’s muesli!

Fun fact: muesli is typically served raw without any processing or baking, so you could say that muesli is like the natural form of granola.

Depending on the type of cereal or muesli, one would immediately notice that there is little to no added sugar. The only sugar present in the fruit-flavoured muesli is the naturally occurring sugars in freeze-dried fruit and the vegetarian-friendly chocolate flavoured muesli only has 9 grams of sugar per 100g of product!

These are perfect for summer as no baking is required plus you only need a handful of simple ingredients. Please feel free to substitute according to your tastes – swap almond butter for peanut butter, add in more nuts instead of just seeds and you can also throw in any dried fruit you have in your pantry. These bites are the perfect sweet snack/treat that give you all the energy you need on these hot summer days.

Muesli Energy Bites

Ingredients

  • 180g soft dates (if not soft, soak in water for 30 minutes)
  • 150g Bjorg Muesli of choice
  • 30g dried cranberry and goji berries (or any dried fruit of choice)
  • 75g mixed seeds (sunflower, pumpkin, sesame)
  • 3 tablespoons of agave syrup
  • 3 tablespoons of almond butter
  • pinch of salt
  • a few drops of vanilla extract (optional)

Instructions

  • Blend the dates in a food processor until you get a paste.
  • Transfer the paste to a bowl and mix with the rest of the ingredients.
  • Cover a dish or a large container with baking paper.
  • Pour in the mixture and, using your hands, press strongly to pack the mixture until you reach a thickness of about 1 cm. (or slightly thicker, if you prefer)
  • Refrigerate for at least 30 minutes.
  • When the mixture has hardened, lift it with the baking paper and cut it into rectangles or squares.
  • These bars can be stored for several days in the fridge. (will keep better if individually wrapped)
