  • 2 slices of bread lightly roasted (sourdough ciabattas) - for coeliacs choose gluten free bread
  • 1/4 homemade green goddess hummus
  • A handful of fresh rocket leaf
  • 4 cherry tomatoes
  • 1/4 tsp smoked paprika
  • 1 tbsp of Mediterranean olive oil


  • Spread the Green Goddess Hummus generously on both sides of the bread.
  • Drizzle a bit of olive oil over the hummus, then sprinkle with smoked paprika for an added depth of flavour.
  • Top with fresh tomato slices and a handful of rocket leaves.
  • Place the sandwich in a toaster or panini press and grill until the bread is golden and slightly crispy.
