Ingredients

  • • 3 large overripe bananas
  • • 75ml vegetable or sunflower oil (plus extra for greasing)
  • • 100g brown sugar
  • • 225g plain flour (or use self-raising flour and reduce baking powder to 2 heaped tsp)
  • • 3 heaped tsp baking powder
  • • 3 tsp cinnamon or mixed spice
  • • 50g dried fruit or nuts (optional)

Instructions

  1. Preheat & Prep
    Preheat your oven to 200°C (180°C fan). Grease and line a 900g loaf tin.
  2. Mash & Mix
    Peel the bananas and mash them in a bowl using a fork. Stir in the oil and brown sugar until well combined.
  3. Add Dry Ingredients
    Mix in the flour, baking powder, and cinnamon (or mixed spice), ensuring everything is evenly incorporated. If using dried fruit or nuts, fold them in.
  4. Bake
    Pour the batter into the prepared loaf tin and bake for 20 minutes. Check the loaf—if it’s browning too quickly, cover with foil.
  5. Final Bake & Cool
    Bake for another 20 minutes, or until a skewer inserted into the centre comes out clean. Allow to cool slightly before slicing.
