Preheat your oven to 200°C (180°C fan). Grease and line a 900g loaf tin.
Peel the bananas and mash them in a bowl using a fork. Stir in the oil and brown sugar until well combined.
Mix in the flour, baking powder, and cinnamon (or mixed spice), ensuring everything is evenly incorporated. If using dried fruit or nuts, fold them in.
Pour the batter into the prepared loaf tin and bake for 20 minutes. Check the loaf—if it’s browning too quickly, cover with foil.
Bake for another 20 minutes, or until a skewer inserted into the centre comes out clean. Allow to cool slightly before slicing.
