Spicy Corn Chowder

  • 250ml almond milk
  • 250ml veg broth
  • 1 knob almond butter
  • 1 onion
  • 1 tbsp spelt flour
  • 1 can corn
  • 1 red pepper
  • 1 jalapeno
  • 1 tsp cumin
  • 2 tsps curry powder
  • 1/2 cup Sheese cheddar to melt
  • 2 shallots to garnish

Cooking instructions:

  1. Warm the milk, broth (do not boil).
  2. Fry onion, butter and flour.
  3. Add pepper, corn and jalapenos.
  4. Add milk concoction, cumin, curry and cheddar Sheese (to melt).
  5. Finally garnish with shallots.
