Ingredients

  • 1 large cabbage (suitable to deleaf, boil and fill)
  • 1 tablespoon tomato paste (kunserva)
  • 1 large onion
  • 2 carrots
  • 1 vegetable cube
  • 1 pkt mince (Beyond Meat)
  • 1 can marrowfat peas
  • 1 can mixed beans
  • Vegan vegetable granules for gravy (I’ll get the vegan one)
  • Olive oil
  • Salt and pepper
  • For the mash potatoes:
  • 5 potatoes medium
  • Vegan margarine
  • Vegan milk
  • Salt and pepper

Instructions

  • boil potatoes
  • detach 8 cabbage leaves and boil to soften
  • meanwhile chop onions and carrots
  • fry in olive oil with cube and tomato paste
  • add mince and beans
  • mix until all is even
  • take off flame
  • Strain boiled cabbage leaves and open them up
  • Place 1-2 table spoonful of the mixture on each leaf and roll
  • Place rolled stuffed cabbage leaves next to each other in a dish
  • Mix a heaped tablespoon of vegetable granules with water in a saucepan and stir on the burner until it thickens
  • rinse marrowfat peas and spread on stuffed cabbage leaves
  • Pour the gravy over them and add a dash of olive oil
  • Season with pepper
  • Place in over for 30 minutes to bake
  • Mash the potatoes, adding a knob of margarine and some milk for a creamy texture.
