Pappa al pomodoro

  • 2 slices stale bread
  • I onion
  • 1 tbsp. tomato paste
  • 1 clove garlic
  • 750ml vegetable stock
  • 4 fresh basil leaves
  • 1/2tsp dried basil
  • Pinch chili
  • Salt & pepper


1. Blanch tomatoes for a minute. Peel the skin and cut in cubes. 2. Cut the bread cubes. Drizzle with some olive oil and sprinkle some dried basil. Toast until lightly golden. 3. Chop the onion finely and fry in olive oil until translucent. Add tomato paste, garlic, chili, salt and pepper and fry for two minutes. 4. Add the peeled tomatoes and dried basil and simmer for 20 minutes. Lastly, add the toasted bread and fresh basil and cook until it thickens. 5. Serve warm with toasted bread and fresh some more basil.
