Here is a simple vegan pie that is easy to make and totally filling. Rich with vegetables, it is easy and quick to prepare using Acqua & Farina’s ready made fresh pasta sfoglia.
Ingredients:
- Acqua & Farina fresh pasta sfoglia
- onion
- aubergine
- 3 small marrows
- 3 mushrooms
- 1 small Capsicum
- small tin of beans
- 6 cherry tomatoes
- 2 tables spoons quinoa
- 1 shredded carrot
- 1 spoon mango chutney
- 1 spoon curry powder
Preparation:
- fry the onion
- Shred all the vegetables and fry with the onions until cooked
- Throw in beans and tomatoes
- Season with salt & pepper
- When cooled throw in the mango chutney and curry
- Simmer for 15 minutes
- Leave to cool.
- Throw mixture in the Acqua & Farina fresh pasta sfoglia
- Put in a pre-heated oven at 180° for 30 minutes or until cooked
- Enjoy

Is quinoa precooked? And at what stage do you add it please? I’ll try adding it raw at the stage of the beans 😊 Thanks!
