  • • 2 tbsp Mediterranean olive oil
  • • 4 chopped cloves of garlic,
  • • ½ chopped white onion
  • • 1 medium cauliflower, cut into florets
  • • 500 ml vegetable broth
  • • 250 ml plant milk
  • • ½ tsp Mediterranean sea salt
  • • Pinch of ground black pepper
  • • 4 tbsp nutritional yeast


  • In a large pot, heat the oil and then sauté the garlic and onion until they turn golden brown.
  • Next, add the cauliflower, broth, and milk, and bring the mixture to a boil.
  • Cook over medium-high heat for 15 to 20 minutes, or until the cauliflower becomes soft.
  • Finally, season with salt, black pepper, and nutritional yeast, then blend using an immersion or regular blender.
  • Serve with your preferred toppings, such as toasted almond slices or chopped chives, and sprinkle some more freshly ground black pepper.
