Any breakfast lovers here? This recipe is for you then! Vegan does not mean boring at all 🙂 Here is healthy stack of pancakes packed with nutrition to fuel you up for the day ahead. 28g Protein and 8g fibre per serving. Not using any refined sugar and it can be also done in gluten-free version. You can top them with whatever your heart (or taste buds) desire and eat totally guilt-free!

Ingredients

  • 1 spotty banana
  • 1 cup Good Earth oat flour (or gluten-free oat flour)
  • 2 scoops The Protein Works vanilla soy protein (or use more flour instead*)
  • 1 heaping tsp baking powder
  • Pinch salt
  • 1/2 tsp cinnamon
  • 1 and 1/2 cup Alpro unsweetened soy milk
  • + toppings according to your preference

Instructions

  • Mash the banana with a fork.
  • Add all the dry ingredients and mix.
  • Pour in soy milk and stir to combine. You should get runny pancake batter. 
  • Spoon about 3 tablespoons of the batter on a heated non-stick frying pan (no need to use oil) and spread it to a round shape. Cook for about 3 minutes from each side.
  • I made 12 pancakes from this amount of ingredients, which is enough for 2-3 portions.
  • Top with your preferred toppings. I used slices of banana, drizzle of maple syrup and shredded coconut.
  • Enjoy your healthy breakfast!

Notes

*You can substitute the protein powder with more oat flour, but then I recommend adding some sweetener such as stevia or maple syrup as well.
