Vegan French Onion Soup

  • Olive oil / vegan butter
  • 3 white onions
  • 1 garlic clove
  • 1 ltr vegetable broth
  • 1 tsp vegan Worcestershire sauce
  • Pinch of dried thyme
  • 1 baguette
  • 50g vegan cheese of your choice


  1. Heat 1 tablespoon of olive oil or vegan butter  in a pan over low heat.
  2. Add 3 onions and sauté until they become translucent, approximately 3 minutes.
  3. Stir in 1 clove of minced garlic and cook for an additional 30 seconds.
  4. Pour in 1 litre of vegetable stock and add 1 teaspoon of Worcestershire sauce. Stir well to release the flavourful brown bits from the bottom of the pan.
  5. Sprinkle with a pinch of dried thyme into the pot.
  6. Bring the soup to a boil and then reduce the heat. Allow it to simmer for 15 minutes.
  7. Taste the soup and season with salt and pepper if desired.
  8. Preheat your oven.
  9. Cut 1 baguette into thin slices.
  10. Top the baguette slices with 50 grams of grated vegan cheese of your choice.
  11. Ladle the soup into ovenproof bowls and place the prepared baguette slices on top.
  12. Put the bowls in the oven for approximately 3 minutes, or until the cheese has melted and turned golden brown.
