Spicy chickpea, cauliflower and tahini (GF) wrap

Ingredients

  • ½ small cauliflower, chopped into florets
  • 1 small white onion, sliced
  • 1 (gluten-free) Wrap
  • 2 Tbsp tahini
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp ground turmeric
  • 1½ Tbsp olive oil
  • ½ Tbsp lemon juice
  • 200g chickpeas, drained and rinsed
  • Small handful rocket

Instructions

  • Preheat the oven to 200°C. 
  • Mix the oil, cumin, coriander, and turmeric in a bowl. 
  • After cutting the cauliflower, place it in the bowl to ensure that it is covered all around with this spice mix.
  • Then, place the cauliflower on a baking tray (using oven paper).
  • Season with salt and pepper, drizzle with 1/2 tablespoon of olive oil. 
  • While the cauliflower is roasting, heat the remaining 1/2 tablespoon of olive oil in a small frying pan over medium-high heat. Add the onion, lightly season, and cook, stirring frequently, for 15 minutes until golden and caramelised. 
  • In a small bowl, combine the rest of the olive oil with tahini, lemon juice, and a splash of water, then season to taste. 
  • Heat the wrap according to package instructions. Layer the roasted cauliflower, chickpeas, and caramelised onions, and rocket down the centre of the wrap.
  • Drizzle with the tahini dressing, wrap up, and enjoy immediately.
