Pasta with pesto & mushroom sauce

  • 1 pkt gluten free penne
  • 1 cup basil leaves
  • 4 tbsp pumpkin seeds
  • 3 cloves garlic
  • Olive oil as needed
  • 250 g brown mushrooms
  • Zest of lemon
  • Handful of walnuts or pecans
  • 1 pkt soya cream or other plant based cream


  • Put basil, pumpkin seeds garlic and olive oil everything in food processer and whizz. Add salt and pepper to taste.
  • Chop mushrooms and garlic
  • Add to pan with 1 tbsp of olive oil
  • Fry until brown
  • Add salt and pepper , zest of lemon and nuts
  • Sauté for 3 minutes
  • Add pesto and cream, mix well and add pasta to pan
  • Stir thorough for 1 minute and serve
