1. Wash and dry the cauliflower florets. Put them on a lined baking tray. Drizzle with olive oil and sprinkle cumin. Add the garlic cloves in their skin and bake for 20 mins until golden. The garlic cloves may need less time. 2. In the meantime, chop the onion, the celery stalk and thyme and fry olive oil in a soup pot. 3. Add the cauliflower florets . Reserve some to garnish. Peal and add the garlic and cover with stock. Season with salt and pepper. Simmer for 10 minutes and blend. Serve with reserved cauliflower florets, cashew nuts and parsley.Ingredients
