Butter bean tuna salad sandwich malta

Here comes summer and therefore a smell of seafood and fish on every Maltese corner. But what if you are trying to follow vegan diet? There is a way to do it! Here is a recipe for vegan “tuna” sandwich made of butter beans and a few more ingredients. It will take you 10 minutes tops to make this sandwich, and it is suitable for people with plant-based diet. Very refreshing, on-the-go (or not) and great to eat in this summer heat! When I first tried it I could not believe the authenticity of it. It really does taste like tuna! Let me know if you agree with me on instagram @fit_mysena 🙂

Ingredients for butter bean “tuna”:

1 tin butter beans, drained

4 tbsp vegan mayo*

1 tsp mustard

1/4 small red onion, diced

1 tsp maple syrup

1/4 tsp smoked paprika

salt and pepper

Rest of ingredients:

4 slices of bread – I used Jasper’s wholemeal toast

lettuce, cucumber, tomato (according to preference)

Directions:

  • It’s so simple: Mash the butter beans with fork, add the rest of the ingredients for butter bean “tuna” into a bowl with mashed beans and mix it altogether.
  • Spread half of the mixture on a slice of bread, add some lettuce, your preferred vegetables and cover with another slice of bread.
  • You can serve it with some salad or chips. Enjoy!

*Note: If you don’t have vegan mayo, you can use regular mayo or plain greek yogurt for non-vegan version.
