Ingredients
- 3/4 cup plain flour,
- 2 tsp sugar,
- 1 tbls polenta,
- 2 tsp baking powder,
- 2 tsp salt,
- 1 tsp black pepper,
- 3/4 cup soy milk (or any vegan milk you have in your fridge),
- 2 1/2 cup chopped yellow onions,
- 2 fresh spring onion onions,
- 1/4 cup oil,
- sweet chilli sauce or chutney
Instructions
- In a mixing bowl, combine the flour, baking powder, polenta, sugar, salt and pepper. Mix well.
- Gradually add the vegan milk to the dry ingredients and whisk until you get a smooth and thick batter. The consistency should be similar to pancake batter.
- Add the thinly sliced onions to the batter and mix until they are well coated.
- Heat oil in a deep pan or skillet over medium heat.
- Using a spoon or your hands, drop small portions of the onion batter into the hot oil. Fry them until they turn golden brown and crispy on both sides.
- Once cooked, (around 3 minutes on both sides) remove the fritters from the oil and place them on a paper towel to absorb any excess oil.
- Serve the vegan crispy onion fritters hot with some sweet chilli sauce or your favourite dip or chutney.
