I’ve always loved oats, but since I came to Malta making porridge became a part of my daily routine. It’s very simple and quick, rich in fibre, worth walking up those 5 minutes earlier! There is so many ways to make it that you can’t get bored of it…although I do occasionally enjoy brunch at some good restaurant as well 🤭
Here is the most basic recipe, healthy, tasty and great to kick-start your day (plus protein packed💪)!
Ingredients for 1 serving:
1/2 cup rolled oats
1 tsp chia seeds
1/2 tsp cinnamon
1/2 scoop vegan protein powder (optional)
1 cup plant based milk – I used Valsoia almond milk
Toppings of choice
Directions:
• Mix oats, chia seeds, cinnamon and protein powder (if using) in a small pot.
• Add milk and bring to boil. If the consistency is too thick, you can add more milk or water. Stir from time to time, make sure it doesn’t stick to the bottom of the pot.
• Simmer for 2 minutes.
• To serve, transfer to a bowl and add your fave toppings – I used fresh strawberries, mango, 1 tsp of peanut butter and Zero calorie white chocolate syrup.
Enjoy fueling up!
Note: If not using protein powder (which I use as sweetener too), I recommend adding 1 tsp of honey for extra sweetness 😊
