Ingredients

  • 4 tbsp olive oil,
  • 1 large onion,
  • 4 garlic cloves,
  • 500gr sliced mushrooms,
  • 2 tbsp flour,
  • 2 tbsp thyme,
  • 1 tbsp mustard
  • 2 ltrs veg stock,
  • 2 tsp lemon juice,
  • 500 gr pasta (penne, spirali) uncooked,
  • chopped parsley to serve.

Instructions

  • Heat olive oil in a pot, then sauté the onion and garlic for 2 minutes.
  • Add the sliced mushrooms and sauté for approximately 6 minutes.
  • Incorporate the flour, thyme, mustard, vegetable stock, and lemon juice, ensuring everything is well combined, then bring the mixture to a boil.
  • Add the uncooked pasta, cover the pot, and simmer on low heat for around 9 minutes, or until the pasta is fully cooked.
  • Serve immediately, garnishing with chopped parsley.
