The vegan garlic and thyme focaccia is a delightful twist on the classic Italian bread. Made with high-quality olive oil, this fluffy yet chewy bread is infused with the aromatic flavours of fresh garlic and earthy thyme.   • 400g bread flour
  • 280g-320g water
  • 7g salt
  • 3g instant yeast
  • 12g olive oil
  • Whole garlic cloves
  • Thyme sprigs
  • Salt flakes


  1. Combine all the ingredients thoroughly and allow the mixture to rest for 30 minutes.
  2. Perform a single set of stretching and folding, then let it rest for 30 minutes.
  3. Conduct a coil fold and allow the dough to rest for 30 minutes.
  4. Perform a final coil fold and let the dough rest for 30 minutes. Afterwards, place it in the refrigerator overnight, for up to 48 hours.
  5. The following day, transfer the dough to a well-oiled dish and let it proof on the counter until it doubles in size. Add whole pieces of garlic with intact skins, thyme sprigs, and sprinkle salt flakes on top.
  6. Bake in a 230°C oven for 20-25 minutes.
