Ingredients

  • • 8 medium fresh beets
  • • Handful of greens (watercress leaves and arugula)
  • • Extra-virgin olive oil
  • • Mediterranean sea salt
  • • Ground black pepper
  • • Can of cannellini beans
  • • 2 fresh cloves garlic
  • • 1 tsp Lemon juice
  • Citrus dressing:
  • • Juice and zest of 1 large orange
  • • 1 Tbsp olive oil
  • • 2 Tbsp balsamic Vinegar
  • • Juice of ½ a lemon
  • • Salt and Pepper

Instructions

  1. Preheat the oven to 200°C. Wrap each beet in foil, generously drizzle with olive oil, and season with sea salt and freshly ground black pepper. Place the wrapped beets on a baking sheet and roast for 35 to 60 minutes, or until they are soft and fork-tender. You can also roast the garlic in foil at the same time.
  2. Once done, take the beets out of the oven, unwrap the foil, and let them cool. Once they are cool enough to handle, peel off the skins.
  3. In the meantime, prepare the bean hummus by blending the drained cannellini beans, roasted garlic, olive oil, and lemon juice in a blender until smooth. Season with salt and pepper to your liking.
  4. Shake up the dressing by combining all the ingredients in a closed jar.
  5. Assemble your plate once the beets have cooled. Use the hummus as a base, place the roasted beets on top, add the greens, and drizzle the dressing over everything. Enjoy with some crusty bread on the side.
