Have you ever heard of tapioca? It is a starch extracted from cassava root, naturally gluten-free. The pearls are often used to make puddings, desserts and snacks. I have made this fruity tapioca dessert for you today. Tapioca pearls have not much of a nutritional value itself, but when you use the right ingredients with it, you can create a nice nutrient filled dessert. Suitable for people allergic or intolerant to wheat, grains, gluten and for vegans as well! You can find them in any good health shop and I saw them even in my favorite veggie shop in St. Paul’s Bay!

Ingredients:

100g tapioca pearls – I used Good Earth brand

600 ml plant milk – I used alpro almond milk

Sweetener – agave/ liquid stevia/ brown sugar

1/2 scoop vegan vanilla protein (optional)

Frozen fruit of choice

Directions:

  • Put the pearls into a medium saucepan alongside with milk and sweetener. If you are using protein powder, put it in the shaker with half of the milk and shake. Then add with the rest of the ingredients in the saucepan.
  • Cook till it thickens a bit, then add frozen fruit and wait till it starts to bubble – stir it constantly!
  • Turn the heat off and let cool a bit. Transfer into glass jars and let cool completely, it will thicken even more while cooling.
  • You can top with more fruit if you desire.
