Beetroot. I personally love this vegetable (ok, I love all vegetables 😀 ), it’s tasty, healthy and you can use it to make basically anything, from a side dish to beet brownies where they play the lead role. Beetroot is packed with essential nutrients, it is a great source of fiber, folate (vitamin B9), manganese, potassium, iron, and vitamin C. Beetroot has been associated with numerous health benefits, including improved blood flow, lower blood pressure, and increased exercise performance. I know it is a bit hot for a bowl of warm soup, but soups are great especially when you are trying to lose some weight. Minimum calories, filled with nutrients and you will actually feel full. Ingredients:
1 tbsp coconut oil
1 clove garlic (minced)
1 big beetroot (peeled and cubed)
2 medium potatoes (peeled and cubed)
200 ml coconut milk
Salt and pepper
1/2 tsp turmeric
1/2 tsp ground cumin
Directions:
- Heat the oil in a medium pot, add minced garlic and sauté for a minute. Then add beetroot and potatoes and sauté some more.
- Pour in about 1 liter of water and add all the seasonings. Let cook until the beet and potatoes are tender, then pour coconut milk in (I used light). Bring to boil and turn the heat off.
- Let cool a bit and blend the soup till smooth.
- You can serve with additional spoonful of coconut milk, or in my case, home-grown fresh basil and some wholemeal crackers 😊
