Ingredients

  • Tofu: 1 block of Soyavit smoked Bio Tofu (extra-firm)
  • Oil: 1-2 tbsp 3 Leaves sunflower oil
  • Aromatics: 1 large garlic clove minced, 1 tsp fresh ginger minced, 1/4 cup sliced onion
  • Spinach: 1 bag baby spinach leaves
  • Seasoning: 3 tbsp Natur Green Tamari soy sauce, 1/4 tsp red chili flakes (optional), 1/4 tsp 3 Leaves black pepper, 3 walnuts halves crushed
  • Tofu seasoning: 1 tbsp Biona Maple Agave syrup, 1 tbsp Natur Green Tamari soy sauce, 3 tbsp Costa d'Oro olive oil
  • Garnish: 2 tbsp toasted sesame seeds, 1 tsp sesame oil

Instructions

  • Pan-fry the tofu
    Heat the oil in a large nonstick pan or wok over medium-high heat. Add the tofu cubes in a single layer and cook for 5–10 minutes, turning occasionally, until all sides are golden and crisp. Transfer the tofu to a plate and set aside.

  • Sauté the aromatics
    Using the same pan, add the sliced onion and sauté for about 1 minute. Stir in the garlic, ginger, chili flakes (optional), and crushed walnuts. Cook for around 30 seconds, or until the mixture becomes fragrant.

  • Wilt the spinach
    Pour in the soy sauce, then add the spinach a handful at a time. Stir continuously as it wilts, about 1–2 minutes, until all the spinach has softened.

  • Season the tofu
    Since the tofu will have dried out slightly, toss it in the agave, soy sauce, and olive oil mixture to allow it to absorb extra flavour before returning it to the pan.

  • Bring it all together
    Add the seasoned tofu back into the pan and mix well to combine with the spinach and aromatics. Warm through, then finish with a drizzle of sesame oil and a sprinkle of toasted sesame seeds. Serve hot with rice or noodles.
