  • 30 ml olive oil
  • 1 yellow onion, diced
  • 2 red bell peppers, seeded and chopped
  • 2 garlic cloves, minced
  • 3 carrots, peeled and chopped
  • 60 ml fresh parsley, chopped (plus extra for garnish)
  • 720 ml low-sodium vegetable broth (add more if needed)
  • 2.5 g salt (adjust to taste)
  • 1.25 g black pepper

Instructions

  • In a medium pot, heat the oil over medium heat and add the diced onion and chopped red bell peppers.
  • Sauté for 3 to 4 minutes until they become soft and translucent.
  • Add the chopped carrots, minced garlic, chopped parsley, vegetable broth, salt, and pepper.
  • Increase the heat to bring the mixture to a boil, then reduce the heat to medium-low, cover, and simmer for 15 to 20 minutes until the carrots are tender.
