Crushed seasoned broad beans

Ingredients

  • 300g beans without shell
  • tablespoon minced garlic
  • 5g curry
  • 5g cumin
  • pinch chili flakes
  • smoked paprika
  • olive oil.
  • mint
  • a few lemon peels

Instructions

  • Boil the the beans in boiling water for a minute and drain.
  • Remove the second skin
  • Heat the oil in a small pan and gently fry the garlic with curry and cumin for a minute.
  • Add the beans, and some water.
  • Cover and simmer everything for about 10 minutes, add water if needed.
  • Add the lemon zest, a little oil and the mint, and season with salt and pepper. Stir well, and mash them a little.
  • Grease a round shape with oil and put it on a plate.
  • Fill with the mixture.
  • Press it well with your hand and remove the mould and put it in the fridge.
  • Garnish with smoked paprika and few mint leaves. Serve with sliced baguette.
